Meal plan Tuesday...good enough edition

First off, this is the biggest snow we've had all winter.  I'm enjoying being cozy at home because I know it won't last.  Pretty, though! (You can also see how lazy I was about cleaning the yard up.)

Second of all, happy Valentine's day.  If you have a honey, enjoy it.  And if you don't, I read this morning "At least vodka is cheaper than dinner for two."

Finally, the meal plan.  Last week's went great for the most part.  This week we are undone by a crazy refrigeration event that I'll post about on Friday.  Some of the food didn't make it.  And we have all kinds of things on the schedule this week which are making everything crazy.  So this week I'm not posting breakfasts and lunches because we're just trying to use it all up, but those will consist of some combo of eggs, toast, cereal, fruit, oatmeal and waffles.  Lunches will be salads, sandwiches and leftovers.  On to dinners.

Monday:  Chicken sandwiches with mixed vegetables

Tuesday: Salmon, garlic mashed potatoes and spinach (heart health day!)
Chocolate cupcakes for dessert.

Wednesday: Dinner at Frisch's (with coupons) to celebrate the *hopefully* awesome parent teacher conferences we will have that afternoon.

Thursday: Chicken fried rice (my style, less fat) and spring rolls (not the fried kind)

Friday: Sandwiches, salad, any and all leftovers

Saturday: Blue and Gold Banquet for Cub Scouting

Sunday: Dear Husband's Choice
